I was able to wake up pretty early this morning to get to the gym for a quick morning workout. I have to admit that working out in the mornings gives me a little bit more energy to make it through the day!
Anyways, after the gym I decided to try something new with my spinach omelette. Here is what I used:
- 1 whole egg
- 2 egg whites
- 1 teaspoon olive oil
- 2 tablespoons quinoa
- 1 handful of spinach
I added two tablespoons of cooked quinoa to give it a little extra something. I didn’t add any salt or pepper to this on purpose. I really wanted to see how it would taste without the extra fluff.
I have to say that I was pleasantly surprised with the quinoa on the omelette, it didn’t taste heavy and I was left feeling really full. I will definitely be making this again!
