Meal Plan

For this week’s meal plan I decided to keep it simple and clean out my cupboard. My meals are a little repetitive but that’s what will work best for me and my schedule this week. I plan to try out a few new recipes next week.

14 Days Vegetarian Challenge

I decided to do a personal challenge for 14 days. I picked 14 days because it’s attainable and doesn’t seem like an unreasonable amount of time.

I’m really looking forward to this challenge, it will give me an opportunity to stretch my boundaries of creativity when creating meals and hopefully plan my meals a little better. I started yesterday (February 15) and will finish up at the end of the month. So far I’m two days down and feeling great. I’m not finding it a big challenge to find recipes and meals at this point.

The biggest challenge for me will be the temptation of wanting to eat meat and dairy, I will definitely have to come up with a strategy for this. I’ll be posting my meal plan for the week tomorrow once I finalize it and make the necessary preparations.

Learning to live in the moment…


I’ve been holed up with my thoughts the last little while. Why? Well, it turns out that turning 31 this past Saturday was something that I wasn’t really looking forward to. Generally, I like birthdays, but they seem to be coming so quickly these last few years. I’m officially part of the 31+ crowd, I have to admit that I felt and still do, feel slightly depressed. I don’t know if it’s me getting older or other things that are going on in my life, either way, the feeling sucks.

I really want to move out of this depressive space that I’m in, it’s exhausting, the mood sucks. I need to really get my mojo back, start feeling good about life again and just enjoying everything that it has to offer. This year is supposed to be a big year for me, I have so many things that I want to cross off my list. They say that being in your 30s is supposed to be where you really find yourself and live your life on your terms. Finding myself hasn’t been so easy but I think I’m getting there, I’m sure this slump won’t last much longer. In the mean time, I’ll continue to live the best life possible.

Happy New Year 2014!

Is it the new year already?!?! Where did the time go??? It’s been a while since I posted, I’ve been so busy with family and starting my business that the time has literally escaped from me. Well, I’m back on track and looking forward to 2014.

I hope you all had an amazing Holiday season with family and loved ones, after all, that’s what it’s all about in the end.

I’m finally getting the chance to get back on track with my weight loss and financial journey. I’ll be posting goals and updates shortly. So many changes will be made for me in the coming weeks and months and I’m really happy to be going in this new direction.

Green Smoothie Week – Mango Spinach Smoothie

Today’s smoothie is officially my new fave, it was so rich and filling and besides, everything is better with mango!

Handful of spinach
1 mango cut into small pieces (frozen mango will work just the same)
1/2 apple
1 tablespoon ground flaxseed

Yummy, this one is definitely going to be one of my go to recipes from now on. It was filling and didn’t leave a weird after taste that you sometimes get with green smoothies. Two thumbs up!

Green Smoothie Week – Spinach Pomegranate

Today’s smoothie was pretty simple, and only contained four ingredients. It’s always interesting for me to see just how far a few ingredients can go.

1 handful of spinach
6-8 pieces of pineapple
Seeds from half of a pomegranate
2 tablespoons of flaxseed





The ingredient that stood out the most was the pineapple, then the Pomegranate. I can’t say it’s been one of my fave so far, maybe because I’m not a big fan of Pomegranate. Other than that it was pretty good.
